Green beans & Freekeh

Ingredients
1 cup cracked freekeh
1 cup water
1 roma tomato, diced
handful of green beans, steamed
fresh mozzarella cheese
2 tbsp. Country Dijon Mustard
olive oil, as needed

Directions
Bring 1 cup water to a boil and add 1 cup freekeh. Let cook for ten minutes, stirring occasionally. Let sit for 5 minutes.

Whisk both the mustard and olive oil for a “dressing." Toss freekeh, green beans, tomato, cheese and dressing together as you would a traditional salad. Serve immediately or chill in fridge for 1-2 hours and serve cold.
