Freekehdorf Salad

Makes 6 Servings

3 cups whole grain cooked freekeh
2 Granny Smith apples, cored and chopped
1 tablespoon white vinegar
1/3 cup diced celery
3/4 cup red seedless grapes, halved
1/4 cup coarsely chopped pumpkin seeds or nuts of your choice
1/2 cup Vegenase (or Mayo)
1 cup shredded red cabbage
1 cup shredded carrots
1 (8 ounce) container low-fat vanilla yogurt
Mix together yogurt, mayo and white vinegar. Add apples, celery, grapes, carrots, and cabbage. Fold into freekeh.
