Sautéed Cauliflower & Freekeh

Ingredients
Makes 4-6 servings

• 2 tbps oilive oil
• 1 tsp cumin
• 2 cloves chopped garlic
• 1 small red onion finely sliced
• 1 head of cauliflower broken into small pieces
• 1 cup grape tomatoes
• 1 cup peas
• ½ tsp tumeric
• 3 cups cooked freekeh
salt and pepper to taste
Directions

1. Heat oil in medium pan. When oil shimmers add garlic, onion and cumin. Cook 2-3 minutes.
2. Add cauliflower and sauté for 8-10 munutes till brown
3. Add tomatoes and peas and tumeric cook for 3 more minutes
4. Mix in cooked freekeh
5. Salt and pepper to taste
