Freekehlicious Cod Cakes

Ingredients

• 1lb poached cod
• 1½ cup milk
• 1½ cup water
• 1/8 cup kosher salt
• 2 Yukon Gold Potatoes mashed
• ½ cup chopped scallions
• 1 cup cooked cracked freekeh
• 1 tbps olive oil
• 2 egg whites
• 3 tbps chopped dill
• 1 cup oat flour
• 1 whole roasted pepper (optional)

Serve with broccoli florets
Directions
1. Heat oven to 375 degrees
2. Place milk, water and salt in sauce pan. Add cod and cook on medium, just before it boils, tthen drop to a simmer for 5 minutes
3. Cook 2 Yukon Gold potatoes in microwave and mash
4. Mix cod, potatoes, scallions, egg whites, freekeh and chopped dill
5. Shape into croquettes and roll in the flour.
6. Place in oiled baking dish and place in oven for 15 minutes
7. Serve with roasted peppers and broccoli
