Freekehlicious Filled Peppers

Ingredients
Makes 4 servings

• 2 cup cooked cracked freekeh
• 1 cup red lentils
• 1 cup cubed tofu
• 1 egg
• ½ cup chopped scallions
• ½ cup grated cheese

• 4 -6 Cubanelle Peppers

• 1 tbps olive oil
• 2 cloves chopped garlic
• 3 cups kale
• 2 carrots shredded
• 1 cup chopped tomatoes
• 2 cups of chicken broth
Directions
1. Mix first 6 ingredients together: cracked freekeh, red lentils, tofu, egg, scallions & grated cheese.
2. Fill peppers
3. In medium saucepan heat olive and add garlic. Cook 2 minutes.
4. Add kale, carrots and tomatoes. Sauté for 5-8 mimutes.
5. Add chicken broth.
6. Place your peppers on top and cook for 25 minutes.
