Freekeh & Eggs

Ingredients
Makes 2 servings.

• 2 beefsteak tomatoes chopped
• 3 cloves garlic chopped
• ½ cup pesto or basil
• 1 1/2 cups cooked cracked freekeh
• 1 tbps olive oil
• 2 eggs
• 1 whole roasted pepper
• ½ Harash Pepper or any type of fiery pepper (optional)
Directions
1. Heat oil on medium heat for 2 minutes.
2. Add chopped garlic sauté 3 minutes.
3. Add chopped tomato and pesto or plain basil.
4. Cook 10 minutes and push tomatoes to edges of pan to form a ring.
5. Add cracked freekeh to center and flatten.
6. Make hole in center and crack to eggs
7. Add sliced red pepper on top
8. Cover and cook to the desired firmness of eggs.
9. A dash of hot pepper
