Beet Hummus

2 medium red beets
⅓ cup cooked cracked freekeh
2 tablespoons sesame seeds
2 cups chickpeas
3 cloves garlic
⅓ cup olive oil
¾ teaspoon pink or sea salt
½ Lemon, juiced

Top with:
chopped cilantro
crumbled feta
and a bit of freekeh!
1. Cook the Cracked Freekeh
1 cup cracked freekeh
2 cups water

Add freekeh to 2 cups of boiling water. Cover. Simmer 20-25 minutes. Let stand for 5 min. Drain any remaining water.

2. Boil beets until tender. Cool and peel the skin. Cut into chunks.

3. In a small fry pan, add sesame seeds and cook over a medium-high heat for about 5 minutes until toasted. Stir the seeds frequently to prevent them from burning.

4. Add the following to your food processor: chickpeas, garlic, sesame seeds, beets, freekeh, olive oil, lemon juice and salt. Puree. Add more lemon juice as needed.

4. Top with cilantro and feta and freekeh
